Why does technology hate me?! My computer has been out of commission for the past two weeks again. The mouse was jumping around constantly, and I couldn’t do anything on it. It was horrible. Fortunately, Matt is good with computers, and he was able to fix it for the most part. The mouse still jumps when I first start my laptop, but I can deal with that as long as it cuts it out after loading up. I don’t know what I would do without Matt!

Anyyyyways, I mentioned in my basil pesto hummus post a couple of weeks ago that I started Whole30. I was really looking for a way to restart my healthy eating and just get back to basics. I absolutely loved it, but around day 21, I started having some heart issues. My heart would race if I just went from sitting to standing. I looked up some side effects of Whole30, and it definitely wasn’t common. I decided to alter Whole30 slightly by reintroducing carbs to see how my body reacted to the change. My heart started feeling better after about 24 hours. *sigh* I really wanted to make it through the full 30 days, but I definitely needed to listen to my body. I hope everyone had a great Memorial Day weekend! I wasn’t feeling well, so I spent the majority of my time resting. Plus, with all of this rain we’ve been getting in Dallas, I just want to curl up on my couch and watch Food Network all day, which may or may not be what I did on Sunday… I don’t think I’ve ever seen it rain this much in Dallas before and I’ve lived here all my life! It’s ridiculous. So far this year, not including the rain totals for May, we’ve had 14.67 inches of rain. I bet after this month we will be up to 20 inches since it’s rained almost every single day in May so far. That’s just about the total amount of precipitation we had last year alone! Oh Mother Nature, you’re so crazy!

Memorial Days in the past signified the beginning of summer and end of school. Cookouts, pool parties, and summer fun. It was such a glorious time! Oh to be young again. I’ve really gotten my blog motivation back now that I’ve finished the transfer. Honestly, a lot of my motivation came after I went to a entrepreneurial seminar for women a couple of weeks ago. I went with my friend who heard about it, and I thoroughly enjoyed it! Mainly because I love having great motivational talks with this friend. She has really helped me stay on top of my blog, and she’s actually the person who really convinced me to start Breadsticks and Gluesticks. I am ever so grateful for her! It finally feels like spring is here! The weather is beautiful (in Texas at least), the birds have begun to sing, and the flowers are starting to bloom. Spring is just so great! It also means that Easter is almost here.

I loved Easter when I was growing up. I got to run around in search for Easter eggs and eat lots of candy. It was so great! Doesn’t little girl Jen look so happy?!

As I mentioned in my last post, I went to Las Vegas with my mom the weekend after I went to Los Angeles. So fancy, huh?! I definitely felt fancy planning two trips back-to-back like that. I didn’t actually want to go two weekends in a row because I’m old (no laughing!) and need a vacation from my vacation sometimes, but my mom had to use her free three night hotel stay by the end of February. I had no choice! The sacrifices I have to make sometimes… Life’s hard right? 😉


Well the trip was absolutely fabulous. I loved every second of it! On Saturday, we went to Red Rock Canyon just outside of Las Vegas. It was so beautiful. It’s so hard to believe that such a breathtaking work of nature is only about twenty minutes from the hustle and bustle of the Las Vegas Strip.  We also got free tickets to see The Mentalist, which was pretty mind-boggling. I’m not usually into magic like this, but it was awesome. I honestly have no idea how he did any of his tricks. Insane. Continue reading →

Oh goodness. I can’t believe it’s been more than a month since my last post. I promise I didn’t forget about you! As I mentioned briefly in my last post, I recently transitioned to a new position within my department and have been busy with training and getting adjusted to my new hours. I know. Excuses, excuses, but I promise I will be better about posting.

I’ve also been busy traveling as well. A couple of weekends ago I went to LA with Brennan to go visit our dad for Chinese New Year with all of our family out there. That was the first time that we had been able to go out there for the holiday and it was spectacular. We went to a Chinese New Year festival where we watched some very talented dancers and ate lots of food. And I mean LOTS of food. We had dim sum for brunch and a family style dinner with about ten different dishes each one as delicious as the last. I was so full afterwards that I felt like Violet Beauregard from Willy Wonka (“You’re turning violet, Violet!). Surely someone could have rolled me out of the room just like her. This is Matt’s concoction actually. He is a wonderful cook (no, he didn’t bribe me to say this), and comes up with creative ideas for recipes all the time. Exciting things are happening! I’ve started a new role in my current department at work, I’m down four pounds in the past two weeks, and I’m revamping the design of Breadsticks and Gluesticks. I’ve been super busy and it’s great! But I do feel guilty that I have neglected to post anything recently. Will you forgive me? I sure hope so because I’ve some great posts in store for y’all including this guaca-hummus recipe.

Random anecdote: the other week Matt and I decided to have a whole bunch of appetizers for dinner when my friend came over. I had seen this recipe for plain old avocado hummus and it inspired me to take it up a notch and make guaca-hummus because guacamole is amazing. For realz. Happy New Year!  A new year means new resolutions.  I’m just like most people who make resolutions and don’t fulfill all of them.  I was good last year and met some of my resolutions (including starting this blog!), but this year I’m determined to meet all of them.

My resolutions are to get a picture from my blog published, run a 5k, save $3,000, and reach my goal weight.  The last resolution is the one that I am striving for the most.  I have had this resolution to lose weight and get in shape for as long as I can remember, and this year is the year that I am going to make it!
